Inspired by the delicious homemade focaccia I had at Caseros, I attempted my own version using just a few simple ingredients. Extremely easy to make, in under 2 hours I had a whole tray perfectly baked warm focaccia. Unlike other bread recipes, focaccia is so easy to make because it doesn’t require a lot of kneading. Clean up is also fairly simple as the dough doesn’t tend to stick everywhere.
Tomato, Onion & Fresh Herb Focaccia Recipe, Adapted from Cookin’ Canuck
1. In a medium bowl, stir together yeast, warm water, and honey. Let rest until yeast blooms and bubbles form on top, about 10 minutes. Stir in flour, 1/4 cup olive oil and 1 teaspoon kosher salt. Turn the dough onto a well-floured surface and knead until dough is smooth, 5 to 10 minutes. Place dough in a lightly oiled bowl, cover with a kitchen towel or plastic wrap, and let rest in a warm place until dough doubles in size, about 1 hour.
2. Preheat oven to 450 degrees F or as high as it goes if your oven was made by idiots and does not indicate the exact temperature. Remove dough from bowl and press it into a lightly oiled 9- by 13-inch baking sheet until it touches the edges. Using your finger, POKE holes all over the dough. Poking shit is fun. Then drizzle the dough with about 1 tablespoon olive oil. Let rest until the dough becomes puffy, about 20 minutes.
3. Slice tomatoes, red onions, and garlic and add on top of the bread.
4. Top the dough with fresh rosemary and another tablespoon of olive oil. Option extra: Parm cheese.
Yeah, I used the fresh rosemary from my herb garden.. I’m so domesticated.
5. Bake until focaccia is golden brown, about 20 minutes. Remove from the oven and allow to cool.
6. Cut into pieces, add some fresh basil and stuff yo face.
1 package (1/4 Oz. Packet) Dry Yeast
1 cup Warm Water
1 teaspoon Honey
2-½ cups All-purpose Flour
1/4 cups Plus 2 Tablespoon Olive Oil, Divided
2 teaspoons Kosher Salt, Divided (sea salt is best)
1 whole Large Red Onion, Thinly Sliced
1 whole Medium Tomato, Cut Into 1/4-inch Slices (OR whole cherry tomatoes)
Sliced Garlic
2 sprigs Rosemary, Needles Removed From Stem
Handful of Fresh Basil

I read this a while ago and I can’t wait to try it out! Looks so delicious and easy! I keep forgetting to pick up yeast, though. I’m going to try it with whole wheat though, do you think it will work? I’ll let you know if so!!
