Healthy Spring Recipe: Quinoa + Raw Veggie Pita Pocket

Spring is here and that means one thing: goodbye bacon, hello verduras.  This recipe is cheap, low cal (ugh I know, the horror) and easy to make.  While it isn’t as tasty as a French toast and bacon sandwich, it probably contains those things called vitamins or minerals or something.  You need to have the following skills to be able to make this meal: be able to cut vegetables, boil water and toast bread.
Make the quinoa and while it’s cookin’ chop all the veggies and put it into a bowl.
Add SALT n’ PEPPA, basil and half of the dressing.Add the quinoa and mix it up.Add the rest of the dressing and mix it up some more.With a spoon, scoop the salad mixture inside toasted pita pockets. EAT IT.

Ingredients:

-1/2 cup quinoa – this is how you cook quinoa. don’t skip the rinsing/soaking step!
-cherry tomatoes, sliced in halves
-chopped carrots
-green onion
-1/2 avocado, sliced
-red & green peppers, sliced
-fresh pineapple, chopped
-thinly chopped lettuce, I prefer iceberg bc it’s the unhealthiest of the lettuces. spinach would work if you are an overachiever
-few leaves of fresh basil
-salt n peppa to taste

Balsamic Tahini Dressing*:
1/3 cup Balsamic vinegar
1/4 cup water
1/4 cup tahini
1/4 tsp garlic powder, or finely minced garlic
squirt of citrus – lemon or lime
salt, pepper

*The dressing can be substituted for any of your favorite salad dressings.
